125g unsalted butter
100g granulated sugar
2 eggs, beated
1 teaspoon Koepoe Koepoe vanilla flavouring
2 tablespoon raisins
225g desiccated coconut
1/2 teaspoon Koepoe Koepoe baking powder
250g plain flour
75g cornflakes, crushed
Preheat oven at 180 degrees. Butter and line a baking tin with parchment paper.
Cream eggs and sugar until creamy. Add in eggs gradually and beat until well mixed.
Add Koepoe Koepoe vanilla flavouring and mix until combined.
Fold in flour and baking powder. Once combined, add in raisins and desiccated coconut.
Shaped dough into tablesppon sized balls and place on baking tray.
Bake for 20 minutes or until golden brown.
Remove from oven and place on wire rack to cool completely.
