You'll Need

Ingredients A:

Bottom Layer (Green)

  • 350ml pandan juice
  • 60 grams Rice Flour
  • 20 grams Tapioca Flour
  • 10 grams Green Pea Flour
  • 100 grams Sugar
  • 1 tsp Koepoe Koepoe Pandan Paste
  • 2 drops of Koepoe Koepoe Light Green Colouring

Ingredients B:

Top Layer (Coconut)

  • 300 ml Coconut Milk
  • 100 ml Water
  • 15 grams Green Pea Flour
  • 50 grams Rice Flour
  • a pinch of Salt
  • 1 tsp Koepoe Koepoe Coconut Milk Flavouring

Methods

  1. Combine Ingredients A. Mix well and strain.
  2. Cook this mixture over bain marie. Once the mixture starts to thicken, remove the mixture from the heat and pour into a square or round baking tin.
  3. Steam over medium heat for about 15 minutes.
  4. Meanwhile, combine Ingredients B and strain.
  5. Cook this mixture over bain marie. Once the mixture starts to thicken, remove the mixture from heat. When the bottom green layer is cooked, pour the coconut mixture on top of the green layer.
  6. Steam over high heat for another 15 minutes.
  7. Remove and let cool completely before serving.
